Enzymatic Solubilization of Cell Wall Materials from Apple Pomace

Abstract
A mathematical model was developed to analyze the enzymatic extraction of water-soluble polysaccharides from apple pomace. Enzymatic solubilization with exo-polygalacturonase was modeled based on exponential functions using reaction rate constants for the extraction and degradation of water0soluble polysaccharides. Reaction rate constant for degradation of water-soluble polysaccharides, 0.0243 hr^-1, was twofold higher than that for extraction, 0.0114 hr^-1. Based on these estimates, the yield of water-soluble polysaccharides was predicted to decrease after 58.7 hr at which the maximum yield was 2.40 g/L.
